Pork and Beans

1 large can pinto beans
1 15 oz can chopped tomatoes
1 small onion, finely chopped
4 strips thick cut bacon, cut into 1" pieces
2 cloves garlic, minced
1 jalapeno pepper, seeded and minced
1/2 tsp cumin powder

Fry bacon until almost crisp. Remove from pan and drain on paper toweling, reserving about 3 tbls. of bacon fat. In reserved fat, fry onions until golden brown, then add garlic, jalapeno and cumin, fry a little more, then add the tomatoes with about 1/2 the juice from the can. Add bacon back to the pan and mix until all ingrediets are incorporated. Transfer to a soup pot and pour pinto beans with about 1/2 the juice from the can into the pot. Stir together, then add enough water to just cover the mixture. Bring to a boil then reduce to a simmer, cook for 1 hour. Makes about 4-5 large servings.

Of course, if you have the time, it is nice to soak "real" beans overnight.

Bobble Dress

I fell in love with this dress a while ago on PurlBee. I modified it a bit but I'm a big fan of how it turned out! Will try to post pics of Noelle wearing it soon...

MIA

I know I've been out of the picture for an inexcusably long time, but I've been GOOD busy and am very happy save a case of minor sniffles. Baby #2 is still ping-pong size and stopped giving me trouble about a week ago. It might be a girl after all. HAHA.

Here are some pics of my girl...

Oven Fries

2 potatoes, scrubbed (better with skins on!)
1/4 cup parmesan cheese
1/4 tsp salt
1/4 tsp pepper
1/2 tsp rosemary
1 tsp garlic powder
2 tblsp olive oil

Preheat oven to 425. Cut potatoes into 8 pieces each, soak in ice cold water and rinse off starch. Pat completely dry with towel. In plastic bag mix cheese, spices and olive oil. Place cut potatoes in bag and try to get them as seasoned as possible.

Place seasoned potatoes on parchment lined cookie sheet and bake for approx. 30 minutes, turning once.
