MIA

I know I've been out of the picture for an inexcusably long time, but I've been GOOD busy and am very happy save a case of minor sniffles. Baby #2 is still ping-pong size and stopped giving me trouble about a week ago. It might be a girl after all. HAHA.

Oven Fries

2 potatoes, scrubbed (better with skins on!)
1/4 cup parmesan cheese
1/4 tsp salt
1/4 tsp pepper
1/2 tsp rosemary
1 tsp garlic powder
2 tblsp olive oil

Preheat oven to 425. Cut potatoes into 8 pieces each, soak in ice cold water and rinse off starch. Pat completely dry with towel. In plastic bag mix cheese, spices and olive oil. Place cut potatoes in bag and try to get them as seasoned as possible.

Place seasoned potatoes on parchment lined cookie sheet and bake for approx. 30 minutes, turning once.

Craft Fair

Recipe

Cornbread

1 stick butter
1 pkg. Jiffy
8 oz. can corn kernels
8 oz. can sweet creamstyle corn
1 cup sour cream
2 eggs

Melt butter and pour into bottom of 9 x 13 baking pan. Mix Jiffy, corn, and sour cream until it is just bound. Beat eggs lightly and then pour into dish, then thoroughly mix the ingredients until it has an even consistency. Smooth top and bake 20-25 minutes at 400 degrees.
